you have to read the tech tree in the game setup screen. the list to the left will detail your civs perks and the right shows their tech tree and units available.

huns are the best starter civ imo since you don't have to spend wood on houses, and saracens & mongols are also very good (especially with forgotten empires)

koreans have either been nerfed or i just used to suck even worse than i do now. then again i don't play water maps which would be a key element to korean civ i guess
