Title: Ogaden's delicious noodles and spicy balls
Post by: Ogaden on March 06, 2014, 07:23:08 pm
Ogaden's delicious noodles and spicy balls:

Preheat oven to 450 f

Add to a large mixing bowl:
one egg
a small handful of Panko bread crumbs (about 1/4 of a cup worth)
some butter (couple tablespoons worth)
pinch of fresh ground pepper
pinch of salt
pinch of fennel seeds (ground or whole)
good amount (1/4 cup or so) of grated Parmesan cheese

Whisk that into a "slurry"

then add about a pound (400 grams) of lamb.  Mix it all loosely together using your hands.

Wash your hands and rinse them so they're still wet, this will help working with the meatballs

Grab a chunk and squeeze it in your hand through your thumb and forefinger and extrude a small amount, grab it with your other hand and gently make it round into a meatball shape, do this until you have about 18 meatballs or thereabouts.

Put the meatballs on a tray and into the oven for 10 minutes

While the meatballs are cooking, pour a good Arrabiatta sauce into a medium sized pot (I like Rao's) or just put a regular tomato pasta sauce in there and squeeze some Sriracha and/or Chili oil in there to make it more like an Arrabiatta, enough to simmer your 18 meatballs in, and bring it to a medium heat so it's simmering.

Once your meatballs have cooked for about 10 minutes in the oven, put them in your Arrabiatta sauce for about half an hour.  When there is 15 minutes left on the timer, bring a large pot of water to a boil with plenty of salt in the water, and when the timer hits 10 minutes, put the Spaghetti in.

When the timer hits 2 or 3 minutes, strain the spaghetti, put some in a big bowl, add some meatballs with arrabiatta sauce, grate on some more Parmesan cheese, and consume.

This goes well with a glass of Grenache
