But how'd they discover the energy, and how did they discover how to use it?

Well, originally many scientists were studying Midichlorians, which are actually the tiny beings that make up all life (Imagine our scientists finding something like that, it's not so different). Then more people, such as philosophers, began to study it as well, but in a less scientific manner. They eventually discovered both a positive side (The light side of the force) and a negative side (The dark side of the force). It became "The Force". I'm not sure how they developed the actual use of it, but I'm going to assume that they became more in tune with it, and simply learned to mold it as you would clay. But this is clay that makes up life.
